We made this new soup last week, and it was so good I've deemed it blog-worthy. It started out as a simple recipe I found in a magazine I wanted to try, and Vince made some additions that were awesome! Here's the recipe exactly as we made it:
Black Bean Soup
2 cans chicken broth
3 cans black beans, rinsed and drained
1 can corn, rinsed and drained
24 oz. salsa (we used cilantro-style)
2 cups shredded cooked chicken
chopped fresh cilantro
Mix everything but the cilantro and bring to a simmer. Simmer until heated through; add the cilantro at the end and then serve it. Squeeze lime juice and add some shredded cheddar on each bowl....yum!
We made it for a game night Friday and again tonight for our small group....delicious both times!
